Simplest Zucchini Bake Ever!

How many times have you looked at your pantry and just thought – crap. Really should have gone shopping… But it’s too late now and you don’t have time to go shopping. Your partner is at work. Your four year old is nagging you cause she’s hungry NOOOOOOW. You contemplate getting the dreaded M word but are too stingy to pay for it.

What do you do? You get innovative.

So, out of the depths of my fridge and pantry, I made zucchini bake and we ate it as a picnic in our lounge room.

Ingredients: 

1 cup self raising flour

1 cup tasty cheese

200g ish (or half the can, as I did) of creamed corn

2 Zucchini

2 Carrots

5 eggs (courtesy of my neighbour)

Method:

Peel and grate carrots. Grate zucchini.

Whisk the eggs. Dump in flour slowly stirring.

Dump in creamed corn, zucchini, carrot, cheese.

Bake for 35 minutes on 180 celcuis.

 

For a zucchini bake that didn’t have onion, or more importantly, bacon… it tasted extremely good!
